Chili P and Sun-dried Tomato Pasta
2 tbsp olive oil
2 tbsp chili p
1/2 yellow onion, chopped
500g ground chicken
2 cups cherry tomatoes, halved
1/4 cup tomato paste
1 cup sun-dried tomatoes, chopped
salt and pepper, to taste
1 pkg of favourite pasta
1 cup reserved pasta water
1 cup of parmesan cheese, grated + more for garnish
1/2 cup pine nuts, toasted
1 cup cilantro, leaves only
In a frying pan on medium high heat, heat oil. Add Chili P and onion, sauté for 5 minutes or until onion is translucent. Add the chicken. Using the back of a wooden spoon, gently break apart the chicken as it cooks. Add the cherry tomatoes and cover with a lid. Reduce the heat to low and allow to simmer until the cherry tomatoes have burst and the chicken is cooked. Stir in the tomato paste and sun-dried tomatoes. season with salt and pepper to taste.
Bring salted water to boil in a large pot. Cook your pasta to al dente. Remove a cup of pasta water and add it to your sauce. Strain the remaining pasta and add it to your sauce with parmesan. Mix to combine.
Serve hot and garnish with pine nuts, parmesan and cilantro.
